Everyday wines, birthday wines or wines for the grandest of occasions must all be synonymous with pleasure and happiness. A good bottle (or more!) of vino lowers our inhibitions, brings us together and creates the perfect atmosphere for great conversation and new discoveries.
Wine can made to be so complex, yet at its most fun, wine is simple, accessible and never pretentious or pompous. It’s just grape juice! For me, modesty and humility are the key values driving my passion. Over the years, I’ve developed an affinity and appreciation for organic and biodynamic wines free of pesticides, chemicals and other additives. Simply put, so-called “natural wines” aim to deliver a true expression of a given grape variety, and are crafted with minimal intervention in order to reflect the climate, land and geology from whence they come. As a result, these exciting wines require an open mind to different aromas and textures given their minimal manipulation and authentic personalities.
I salute the dynamic artisanal vintners who have chosen to respect our environment and their craft by boldly moving away from commercial, standardized products that lack creativity and energy. Natural wines are full of life and the perfect match for Colombe’s creative, beautifully balanced dishes. Moreover, they share the restaurant’s founding philosophies of respect for Mother Nature and the importance of authenticity.
